I found this while searching for another Lidia bean soup recipe. There are extremely few things that make me jealous, but your experience at Eataly is one of them!

I have made this recipe in the past. It's in one of Lydia's books. I don't recall which one right now but you can't go wrong with one of her books. I was planning to make this tonight and rather than look for the book I searched on line and found you story.

It sounds like you really had a nice experience with her. It also sounds like she is deep down and nice Italian Nani!

Thanks for the nice story and for post the recipe and saving me the work of finding it amoung my many cook books.

Bon Appetite.

Say no more. I remember waiting tables for 5 years making a measly $2.13/hr so yes I was very dependent on tips. If it was a slow night I was screwed. Sometimes I liked being a hostess instead. You don't get tips but at least you know what your paycheck will look like at the end of the week. I was also a restaurant manager. The pay wasn't lucrative but I wasn't starving either. I'm just glad I was paid overtime because the hours as you know are super long. Just my opinion but I think salaried managers are underpaid.

Ah the 7 train! Memories! My family lives in Jackson Heights, Queens so that's the train I'm always on when I go to NYC. I've never been to Chinatown in Flushing but your description reminds me of the one here in LA. I too respect other cultures' dining but yes the pics of the frogs made me squirm as the real ones I've seen on the streets in Chinatown here made me do the same. And yes it's totally a culture shock. Actually, Queens is chock full of different cultures so it's super easy to try diff. cuisines without going too far from home.
